Ingredients
1 unbaked pie crust
1 cup sugar
¾ cup margarine, melted
1 teaspoon vanilla
¾ cup Bush’s pinto beans, heated and lightly mashed
½ cup pecans, finely chopped
2 eggs, well beaten
Instructions
1. Heat oven to 350 degrees.
2. Drain the pinto beans, reserving ¼ cup of the liquid.
3. In a large bowl, combine the sugar, margarine, vanilla, beans, reserved liquid, pecans and eggs. Pour into unbaked pie shell. Bake for 45 minutes to 1 hour. Center of pie will be slightly unset. Can be frozen.
