Ingredients

  • Seeds from 1 pumpkin
  • 1/4 teaspoon paprika
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt

Instructions

  1. Heat oven to 350 degrees. Wash and dry pumpkin seeds and place them in a large mixing bowl.
  2. Add paprika, olive oil and sea salt to seeds and stir to combine.
  3. Spread seeds out on a parchment-lined baking sheet. Bake for 30 minutes. Remove from oven and allow sees to cool completely before serving.

    I’ve seen several recipes advising that the seeds are easier to digest if you bring water to a boil and simmer them for 5-10 minutes, blot dry on a kitchen towel, then season and roast. Haven’t done a side-by-side comparison, but they seem to shrink less and are easier to chew, but still nice and crispy! I love pumpkin seeds but only feels like it’s worth it when I’m processing several – one just doesn’t seem to result in enough for all the cleaning and mess. 🙂
