I’ve seen several recipes advising that the seeds are easier to digest if you bring water to a boil and simmer them for 5-10 minutes, blot dry on a kitchen towel, then season and roast. Haven’t done a side-by-side comparison, but they seem to shrink less and are easier to chew, but still nice and crispy! I love pumpkin seeds but only feels like it’s worth it when I’m processing several – one just doesn’t seem to result in enough for all the cleaning and mess. 🙂
