Recipes for an Easter Feast

Over the years, I have fallen into a tradition of preparing a rather predictable, and somewhat formal, Easter brunch. While brunch is a lovely way to mark this special day, I’ve decided to shake it up a bit this year. Why not hold off and offer a meal to cap off the holiday in casual style? No Easter attire required.

We can argue over what exactly “supper” means. Most sources agree that it is a light evening meal. Some insist that it follows a midday dinner. Some suggest that we sing for it. I’m blending some new and old ideas to make a light evening meal that is substantial enough to be the main meal. It’s going to be served after the hubbub of the holiday wanes, and every chocolate egg has been found. I won’t take out my china and silver for it. I will serve it family style at the kitchen table. Singing for it will be optional.

The meal suggested is meant to honor seasonal favorites while keeping things fairly simple. (And you can also use these recipes as inspiration for other spring events often centered around food, including Mother’s Day and graduation.)

Mixed Asparagus with Brown Butter and Hazelnuts

Did you know that we are smack dab in the middle of Spargelzeit? That’s German for “asparagus time.” From mid-April until June, we can enjoy the bounty of this springtime favorite all over Tennessee. White asparagus is grown under cover, picked just when the tips begin to poke out of the dirt, thus side-stepping the photosynthesis that turns it green. Its slightly tough exterior requires peeling. When serving white and green asparagus together, put the white in first to steam just a bit longer. Be certain to choose the freshest asparagus you can find.
