Cooking bacon also comes with the added benefit of bacon fat – that liquid gold with an endless number of uses in the kitchen. Every good Southerner keeps a container on hand for adding rich, smoky flavor to all kinds of recipes. It’s the secret ingredient that can season any vegetable dish, grease any cornbread skillet or flavor any salad dressing. Most of the following recipes include at least a tablespoon or two of rendered bacon fat. But just in case you don’t already have a jar lying around your kitchen, we’ve included instructions for making that, too.

If you’re looking for a few creative ways to showcase the distinctive flavor of bacon beyond the breakfast table, these five recipes are worth going hog wild over.

How to Make Rendered Bacon Fat

Makes: ½-¾ cup

Ingredients:

1 package (12 ounces) bacon

Instructions:

Heat oven to 375 degrees.

Arrange all bacon on a baking sheet and bake for 20 to 25 minutes, or until bacon is brown and crispy and bacon fat has rendered. Use tongs to arrange cooked bacon on a plate covered with paper towels. Carefully pour rendered bacon fat from the baking sheet into a heatproof container to use in many of these recipes.
