As soon as the holidays come to an end, we begin thinking about the changes we want to make in the new year. Cooking opportunities abounded for most of us in 2020. While homebound, we experimented with baking and found ways to incorporate those neglected pantry items into new dishes. We resolved not to waste. We made up new names for snacking, like bressert (breakfast dessert). Some of us may have put on a few extra pounds while stress eating.

Wouldn’t it be nice to look back on 2020 and remember what worked? What foods tasted great? What foods were satisfying and made us feel good? What did we do right that we want to carry into the new year?

Unlike giving up a vice or bad habit, we can’t give up eating, so we might as well set ourselves up for success by focusing on eating well rather than restricting. We can make good food choices by aiming for satiety and nourishment. When we don’t get enough fat or protein, for example, we don’t stay full. And that’s when snacking and unhealthy choices begin to creep into even our best laid plans. But nourishment isn’t only about getting the right balance of protein, fats and vitamins. We also nourish ourselves in mind, body and spirit when we eat delicious, well-prepared food.

The following recipes are meant to get us thinking about how we can nourish ourselves by adding more vegetables to a wider scope of dishes, cooking with healthier sources of protein and exploring new combinations of delicious everyday foods.

A new year presents a great opportunity to build on the things we know work for us. So, focus on nourishment, drink plenty of water and get moving. 2021 is going to be the best year yet!
